Description: This video describes an easy simple way to make yakhni pulav, a delicacy from North India. Ingredients: Rice, Mutton, Spice Bag: [Cloves, Black Pepper, Bay Leaf, Cinnamon, Fennel, Coriander Seeds, Cummin, Mace, Nutmeg, Black Stone Flower (optional), Star Anise, Whole Dry Red Chillies, Onion, Garlic, Ginger], Onion, Ginger-Garlic Paste, Salt, Water Method: Soak the rice in water for an hour or so. In a pressure cooker add the mutton, spice bag, 2 litres of water and salt. Let it pressure cook for sometime. After 6-7 whistles the mutton will be quiet tender just the way we want. Separate the broth and the cooked meat, retaining the broth to cook the rice. In a pan, heat the oil and fry the onions till golden brown and keep this aside - this will be used as a dressing over the pulav. In the very same oil add the ginger garlic paste saute it for a while add the meat and saute till the meat is covered with the oil and changes colour. Add the stock and the rice now to the meat, check the seasoning of the salt and adjust as per taste, cover with a lid and cook for 15 minutes on a medium flame. Keep checking the edges to see if it is done, we just need to cook the rice as the meat is already cooked. Serve it hot with kebabs, boondi raita and garlic & red chilly chutney.
